Paleo Avocado Egg Salad

Ingredients:

• 4 eggs – hard-boiled – peeled & chopped

• 1 Large Avocado • 1-2 Green Onions, finely chopped

• 1 tbsp Dijon Mustard • 1 tbsp Lemon Juice • 1 Tbsp Avocado Oil

• Salt & Pepper (to taste)

Directions: Mix all ingredients in a medium-sized bowl. Serve with your favorite paleo crackers, wrap or bread!
